Pellegrino's Zibibbo Gibelè comes from the vineyards in the province of Trapani. We are between sea level and 400 meters above sea level, on clayey soils; here the climate is purely Mediterranean, with mild winters, limited rainfall and hot and breezy summers, conditions that allow the natural health of the plants. The harvest takes place starting from the first ten days of September; the grapes are partially subjected to maceration, then they are gently pressed and fermented at a controlled temperature. The wine then refines briefly in steel for 4 months, and a further period in the bottle.
Tasting: Pellegrino's Zibibbo Gibelè has a bright straw yellow color. The nose is aromatically intense, with characteristic notes of fresh grapes, jasmine, lavender, and then green apple and cedar. In the mouth it is dry, slightly sapid, with a citrus freshness and great correspondence with the olfactory profile. Very suitable to accompany sushi, such as chickpea puree with pink prawns.
