An Italian story.

The London Dry Gin by Winestillery was created to investigate the great botanical heritage of Tuscany and the Chianti Classico region. The wine distillate, together with a unique selection of botanicals, is distilled through the Pot Still alembic, called Bacchus, in order to obtain a gin capable of transporting you to the heart of Tuscany.

Aromatic profile: the perfume is intense with strong typical wine aromas, delicate hints of menthol, juniper, coriander and dark woods, lemon and orange peel. Rich and velvety on the palate, fresh fruit, medicinal herbs and citrus fruits prevail, combined with a balsamic touch. An olfactory walk through the hills of Tuscany.

Some of the 13 botanicals used are Juniper, Coriander, Iris roots (Fiore di Giaggiolo), all native to the region. Others are derived from the traditions of medieval Tuscan spice doctors such as orange peel, rosemary and basil.

The composition of the botanicals is not fully disclosed. Agricultural alcohol is distilled from Sangiovese del Chianti wine, produced by the same company.

The distillation of the botanicals takes place simultaneously with two techniques. Bennet technique for maceration and subsequent distillation of the macerate and Carter Head technique in a current of steam. Performed by letting the vapor of the alcohol and botanical distillate flow through a stainless steel “basket” containing the remaining part of essences.
The resulting vapor is condensed and collected.

The final product after distillation rests for about a month in stainless steel tanks, to allow any spontaneous alcohol-acid esterification to take place and allow the taste to stabilize. (It is also suitable for limoncello)

After the rest period, the distillate is diluted to a gradation of 42% by volume.

Not cold filtered.

Curiosity: The alembic is custom built, it acts at the same time as a Scottish Pot Still, working in a steam jacket, which by turning a simple valve the alembic becomes an extractor in a current of steam.
Given the region and the uniqueness of the still, the owners called it Bacchus.

Recommended cocktail: Given the great spiciness Winestillery London Dry Gin is a great martini cocktail gin, super dry, with just a dash of Winestillery Tuscan Vermouth.
