Alipus is a project of the Los Danzantes distillery that stems from the desire to preserve the role of the mezcalero and its family in its own territory so that the production of mezcal continues to be the family business of the masters of this place. Precisely for this reason each production takes its name from the village in which it is distilled, such as San Juan, by the master distiller Joel Cruz who selects the agaves, cooks them in underground stone ovens, grinds them with horse-drawn wheels on a stone floor. , and finally, he distills them in traditional copper stills. This Mezcal is not a simple distillate but the product of entire generations that, for a lifetime, have handed down this great tradition.
Very clear and transparent, thanks also to the double distillation, it is distinguished by an earthy, almost fungal character, which also refers to hints of moss and dry leaves, while instead the taste reveals much more 'lightness' and less austerity of the nose, with nice notes of peach and white melon.
