Coriander plays a central role within a gin, particularly evident as it tends to persist on the palate.

The flavor of the coriander seed is complex once it is all distilled into a citrusy, nutty and slightly spicy one. The use of coriander in gin is almost exclusively in seed. Use whole coriander seeds that have been air dried to improve the flavor profile. It uses the highest quality coriander from Morocco and Spain.
