The Kyoto Distillery is the first gin distillery ever opened in Japan and has only been operational for a few years, precisely since 2016, and is the only Japanese distillery specializing in the production of gin, Ki No Bi, a name that translated from Japanese means " the beauty of the seasons ". The operational base is located in the southern district of the city of Kyoto, rich in history and traditions, a sign of the desire to produce a gin in the name of craftsmanship. Furthermore, the location of the city is geographically ideal for finding first-rate raw materials, starting from the water famous for its purity from Fushimi, an area of ​​Kyoto known not only for sake, but also for its beautiful places. natural and for the suggestive temple of Inari with its hundreds of torii that mark the path along the mountain. But the alcoholic base of Ki No Bi Gin is rice, a rather unusual element for the production of gin and more similar to the base with which sake is produced. In addition to rice, there are other botanicals that grow in this area of ​​Japan, such as yuzu, green tea gyokuro, juniper and Hinoki wood, a type of Japanese cypress, which produces pine notes combined with very special spicy notes. Each of them is distilled separately through the use of two discontinuous stills, one of 140 liters and one of 450 liters with the characteristic swan neck. What is not revealed is the secret of blending. The joined bases are in fact left to rest for about a day, then water is added and finally everything rests for another week. The goal to be achieved is one and very specific: harmony, that is the perfect balance between all the elements used.
This is the true strength of Ki No Bi gin, a gin that expresses all the care that this people take in the production of the ingredients and in their selection, obtaining an incredibly delicious gin, guardian of the typical flavors of Japan.
Crystalline and luminous, it has a delicate and enveloping nose of citrus, orange blossom and jasmine, together with hints of balsamic and slightly mentholated with a vegetable background. The taste is courteous just like the nose, it flows soft and gentle, surprisingly drinkable and with a long, harmonious and floral finish.
